Domaine Champy
This is when it all started for Dimitri and his recognition as an oenologist in Burgundy. Beginning in June 1991, for eight years working as a consultant oenologist, Dimitri helped bring to prominence the Oenology Laboratory S.G.S in Beaune. Amongst his clients were many of the most eminent domains of the Côte d’Or – Serafin and Trapet in Gevrey Chambertin, R. Groffier and Perrot-Minot in Morey-Saint-Denis, Christophe Roumier and Christian Amiot-Sernelle in Chambolle-Musigny, Lecheneau and Legros in Nuits-Saint-Georges, Bonneau Du Martray in Pernand-Vergelesses, Philippe Senard in Aloxe-Corton, Prince de Merode in Ladoix-Serrigny, Henri Boilliot and Marquis d’Angerville in Volnay, Paul Garaudet in Monthélie, Hubert Lamy in Saint-Aubin, Denis Clair and Vincent Girardin in Santenay.
Spanning the entire Côte d’Or, from Santenay the village furthest south of the Côte de Beaune to Marsannay all the way north in the Côte de Nuits, Dimitri was able to study and experience all of the different micro-climats and terroirs that are the wealth of Burgundy and which in each of the different appellations create unique wines. For eight years, Dimitri pushed open the doors of the cellars of these domains, consulting during the harvest, the winemaking and the maturing of the wines. Persistent and passionate, Dimitri was constantly present at the domains – tasting, advising and learning – he was driven to improve the quality of the wines of his clients.
In 1999, Dimitri took the position as the winemaker and technical manager of Maison Champy. Being the right man, at the right place and feeling ready to begin making his own wine – Maison Champy could not have asked for someone with a broader experience in and knowledge of Burgundy.
