“I’ve never thought of or considered myself a chef. I am a man that simply realized that what my family had done for generations was something special.” 

Meet pitmaster Sam Jones of Sam Jones BBQ and the famous Skylight Inn in North Carolina. Sam will be smoking up a whole hog at this year’s Harvest Wine & Food Festival and can be found at the festival near his friends, The Fox Brothers. 

What are you most known for?
I am a third-generation whole hog BBQ man.

When did you know you wanted to be a chef?
I’ve never thought of or considered myself a chef. I am a man that simply realized that what my family had done for generations was something special.

What’s an ingredient that you can’t live without?
Iodized salt. Yes, Iodized, not kosher.

What’s your favorite wine pairing?
A nice, smooth red with a good piece of beef.

What’s the inspiration behind your restaurant names?
Skylight Inn happened long before my time. That story is a whole other thing. Sam Jones BBQ came to be because of being fortunate enough to be recognized for my efforts aside from my grandfather.

What are you most proud of accomplishing throughout your career?
I’m answering these questions at 3:45am, in Portland, sitting in front of a burn barrel. If I had to quit what I do tomorrow, the true, life-long friends I’ve made would be the only thing that I would cherish for the rest of my life.
