Neall Bailey
Executive Chef Neall Bailey received his training from the
Canadian Industry Training and Apprenticeship Commission at Vancouver Community
College. After serving in a number of positions from line cook to sous chef, he
has worked as an executive chef since 2004.
His resume includes positions in hotels, resorts, cruise
ships and private clubs in Canada, Switzerland and the US. He has also served
as culinary host to world leaders, heads of state, international delegations
and Fortune 500 corporate executives.
He functioned as host chef to the Relais & Chateau World
Congress which included cooking a classic President-Lincoln-Era Dinner for the
Relais & Chateau Board of Directors. The guest list at that event included
twelve Michelin starred Chefs.
While working in Washington, DC, Neall played an active role in the opening of Cafe du Parc in the Willard Hotel under the guidance of three-star Michelin Chef Antoine Westermann. Neall organized the Willard's inauguration festivities in 2009. The three-day event included hosting parties for a number of successful Congressional candidates, serving more than 21,000 guests. He also represented the United States at the MLA Black Box Competition held in Dubai, UAE.
Hosting several Chaine de Rotisseur Wine Dinners helped him
develop relationships with a number of local food growers including farmers,
ranchers and gatherers. These relationships allow him to incorporate the
farm-to-table concept into his menus.
Neall Bailey is also a former Executive Chef at La Playa Beach and Golf Resort where he oversaw La Playa's several distinct food operations: casual fare in the Tiki bar, southwest Florida regional cuisine in the acclaimed Baleen restaurant as well as banquet operations resort wide. During his tenure, La Playa was named to the Conde Nast Gold List as a premier food and beverage destination.
Neall Bailey is currently executive Chef at Bay Colony Beach Club in Naples Florida where he lives with his wife Dragana and their two children Aeslin and Aiden.
